Recipe Ingredients for Cheese & Vegemite Scroll

3 1/2 cups Self Raising Flour
3 tbs butter
1 1/2 cups buttermilk
3/4 cup low fat cheddar

Recipe Directions for Cheese & Vegemite Scroll

  1. Preheat oven to 220C fan-forced. Spray a flat baking tray with cooking oil and line with baking paper.

  2. Sift the flour into a large bowl. Add the spread and use fingertips to rub the spread into flour until mixture resembles fine breadcrumbs. Make a well in the centre. Add 11/2 cups of the buttermilk and stir until dough almost comes together, adding more if required to form a soft dough. Tip the dough on a lightly floured surface and knead gently until dough comes together.

  3. Roll dough out to a 25cmx36cm rectangle, spread the vegemite over the dough right to the corners. Scatter over the cheese. Starting from one long side, roll up like a swiss roll. Cut dough into twelve, 3cm-thick slices. Arrange the scrolls on the tray almost touching each other.

  4. Bake the scrolls for 15-20 minutes or until golden and cooked through. Stand 5 minutes on tray before carefully pulling apart.
