Makes 12 servings



These are the same as the other Egg Muffins, but just using cheese and tomato. These are good because you can use whatever you have on hand!

Recipe Ingredients for Cheese & Tomato Egg Muffins

10 eggs
1/4 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 tomato
3 slices Cheese Slices

Recipe Directions for Cheese & Tomato Egg Muffins

  1. Preheat oven to 350 degrees.

  2. Spray muffin tin with nonstick cooking spray.

  3. Whisk eggs, milk, salt and pepper together in a small bowl.

  4. Chop up the tomato half and distribute into the muffin tins.

  5. Pour egg mixture into each mold in the muffin tin.

  6. Cut slices of cheese into 12 squares and distribute over top of the muffins.

  7. Bake in the oven for 15-20 minutes, keeping an eye in them.
