I messed around with a cheese steak soup recipe I found, trying to make it lower in sodium. Also, I took out the 1.5 large onions because my husband doesn't like them. If you want to use onions, saute them in the oil for 2 to 3 minutes, then start on the recipe as listed below.

Recipe Ingredients for Cheese Steak Soup, lower sodium

2 tablespoons canola oil
2 teaspoons freshly ground black pepper
3 tablespoons all-purpose flour
1 tablespoon onion powder, granulated
2 tablespoons garlic powder
1 pound beef tenderloin, sliced thin and cubed
3 cups beef stock, low sodium
3 cups water
3 ounces Velveeta

Recipe Directions for Cheese Steak Soup, lower sodium

  1. Heat the oil on high in a large stockpot or Dutch oven.

  2. In a large baggie, mix pepper, flour, onion powder, and garlic powder together. Add meat to seasoned flour. Shake to coat and add flour and meat to pot. Cook until meat is lightly browned, stirring frequently for about 8 to 10 minutes.

  3. Add water and beef stock to pot and continue to cook and stir on high until soup begins to thicken. Bring to a boil. Turn heat off and add cheese. Cover the pot with a lid and allow the cheese to sit and melt.

  4. Serve with rolls or in bread bowls and garnish with chives and parsley.
