Recipe Ingredients for Cheese & Spinach Stuffed Portobello

1 cup Ricotta, Part Skim Milk Cheese
20 medium mushroom Portobello Mushrooms
0.25 tsp Salt, Table
1/4 tsp Spices Ground Black Pepper
2 oz Freshly Shredded Parmesan Cheese
4 olives Kalamata Whole Olives
2 cup Spinach
0.75 cup Sauce, Pasta, Spaghetti/marinara, Ready-to-serve
0.5 tsp Italian Seasoning

Recipe Directions for Cheese & Spinach Stuffed Portobello

  1. 1. Preheat Oven to 450.

  2. 2. Place mushrooms on a greased baking sheet. Sprinkle with salt and 1/8 tsp pepper. Bake until tender, about 20-25 minutes.

  3. 3. While baking, mash ricotta, spinach, 1/4 c Parmesan, olives, Italian seasoning, and 1/8 tsp of pepper. In a separate bowl, heat marinara on high for 30 to 90 seconds.

  4. 4. When mushrooms are tender, pour out any liquid. Return to pan and spread 1 tbsp of marinara on each cap. Then, place 1/3 c of ricotta filling on each cap. Sprinkle remaining 1/4 c of Parmesan over ricotta filling.

  5. 5. Bake until hot. Serve with remaining marinara sauce.
