Recipe Ingredients for Cheese Spinach Pie

1 lb fresh spinach, cooked and chopped
1 cup low fat cottage cheese
2 eggs, beaten
1 teaspoon caraway seed
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg
1 slice bread , crumbled
1 tablespoon margarine
2 tablespoons parmesan cheese, grated
2 teaspoons chopped parsley
1/8 teaspoon paprika

Recipe Directions for Cheese Spinach Pie

  1. Mix the first seven ingredients together. Pour into a small shallow casserole or 8-inch pin pan.

  2. Melt the margarine in a small saute pan. Add the bread crumbs and toss until golden. Add the cheese, parsley and paprika. Spread this mixture over the spinach mixture in the casserole.

  3. Bake at 350 for 20 to 30 minutes or until center begins to set. Serve hot.
