Recipe Ingredients for cheese souffle

2 ounces butter
1/4 c flour
1 c milk
1/4 c beef broth
1 1/2 c shredded cheddar
6 eggs

Recipe Directions for cheese souffle

  1. melt the butter with the flour, to blonde roux, mix in milk, stir to bubbling, and thick.

  2. Add cheese.

  3. Separate the egg yolks from the whites, butter souffle pan, beat whites to stiff peaks, stir yolks into bechamel.

  4. You can add 1/4 t cream of tartar on or 3/4 t of lemon juice to whites to help them hold.

  5. fold whites carefully into custard, in quarters.

  6. empty souffle into prepared pan, then bake at 375 for 25-30 minutes
