Recipe Ingredients for Cheese Souffle

4 oz margarine
4 oz flour
4 eggs (separated)
4 fl oz milk
6 oz low fat cheese
1 tsp mustard

Recipe Directions for Cheese Souffle

  1. Melt margarine in pan, add flour to make a roux, then gradually stir in milk.

  2. Separate the eggs putting the whites in a bowl for later.

  3. Let the roux mixture cool down before beating in the four egg yolks.

  4. Add the mustard and cheese.

  5. Whisk the egg whites until they form stiff peaks. Gently fold the egg whites into the cheesy roux mixture.

  6. When the egg whites are fully incorporated put into a well buttered souffle dish and cook for 30-40 minutes on 190 oC.

  7. Serve immediately.
