Very famous and classic French dish. Delicious and elegant, there are many variations, this is the original basic recipe.

Recipe Ingredients for Cheese souffle

3 eggs
3 T. butter
3 T. flour
1 1/2 cups milk
5 T. parmesan cheese, grated
2 T. gruyere cheese, grated
1/2 t. salt
1/4 t. pepper

Recipe Directions for Cheese souffle

  1. First butter and coat inside of a 8" souffle pan. Preheat oven to 350 degrees.

  2. Then: Make bechamel sauce

  3. 1. Melt butter in sauce pan and whisk in flour, 1 tablespoon at a time. Cook this mixture for about 5 minutes, stirring constantly to prevent sticking and burning. It will turn light golden and smell very delicious.

  4. 2. Warm milk in a small saucepan and add slowly to flour mixture stirring all the time over medim heat until mixture boils and gets thick. Remove from heat. Let cool and add the grated cheese and stir until cheese is incorporated and melted. Set aside.

  5. 3. Separate the egg yolks from the whites. Beat yolks until combined and add to bechamel sauce. Whip whites until stiff, add salt and slowly, gently add whipped egg whites to bechamel/ yolk mixture. Make sure to use a tool with rounded edges to prevent the whites from getting flattened.

  6. 4. Bake at 350 for 30 to 35 minutes. Top should be golden brown and the souffle should not jiggle when checked. No jumping jacks or door slamming while souffle is baking. Serve immediately!
