Recipe Ingredients for Cheese Souffle

4 tbsp butter
1/4 cup flour
1 cups milk, warmed until hot to the touch
6 eggs, separated
1 tsp salt
1/4 tsp pepper
1/4 tsp cayenne
1/2 cup cheddar cheese, grated
1/2 cup parmesan cheese, grated

Recipe Directions for Cheese Souffle

  1. Preheat oven to 400 F. Grease souffle dish.

  2. Place medium saucepan over medium heat. Add butter. When it foams add flour and turn the heat to medium low. Cook, stirring, until the mixutre darkens a bit, about 3 minutes. Whisk in milk, then cook until mixture is thick.

  3. Turn heat off and stir in egg yolks, salt, pepper, cayenne, and cheese.

  4. Beat egg whites with a pinch of salt until they hold soft peaks. Fold egg whites into batter.

  5. Put in souffle dish and bake until souffle is brown on top.
