Cheese Sauce Recipe

A rich cheese sauce, lightly spiced with garlic and nutmeg

Recipe Ingredients for Cheese Sauce

200 g Milk
5 g Whole Wheat Flour
100 g Extra Sharp Cheddar
30 g Margerine
1 clove garlic
1/2 tsp nutmeg

Recipe Directions for Cheese Sauce

  1. Grate the cheese finely

  2. Melt the butter in a small saucepan.

  3. Peel and grate the garlic.

  4. Add the garlic and flour to the pan and simmer on low heat until it starts to brown.

  5. Add the milk a little at a time, stirring well to avoid lumps.

  6. If it gets really lumpy you can rescue it by pouring the saucepan contents into a blender, adding the cheese, and blending until it's smooth. If you do this, return it to a low heat afterwards so that the sauce will thicken. Go to step 8

  7. If you're good at stirring and it's not lumpy, add the cheese next, a little at a time, and allow the milk to start boiling.

  8. Once it starts to boil, turn the heat all the way down to the lowest, and add the nutmeg. The sauce should start to thicken, keep stirring it on the heat until you get the consistency you want.

  9. If it gets too thick at this stage, add a very small amount of water, you want to add no more than about 5 ml at a time, stir it in well before adding more. Otherwise it can get too runny and you'll have to add more flour, and that can get very messy!
