low fat cheese sauce for pasta, veggies, etc.

Recipe Ingredients for cheese sauce

3 tablespoons margarine
2 cups fat free milk
3 tablespoons flour
3/4 cup shredded cheddar cheese

Recipe Directions for cheese sauce

melt butter in saucepan over law heat. Add 3 tbsp of flour and stir until a paste is formed. Cook on low for another 2 minutes. Add 2 cups of fat free milk to the paste, a few ounces at a time, stirring continuously with a whisk. Continue whisking while heating the mixture over medium-high heat until the sauce begins to thicken. Reduce heat to low and simmer 5 minutes. Add 1/4 cup cheese to mixture and stir until cheese completely melts. Add some salt and pepper to taste. Cook over law for another 2 to 3 minutes stirring occasionally but never let it come to a boil.
