Recipe Ingredients for Cheese Puffs

1 cup water
2 tbls butter
1/2 tsp salt
1/8 tsp cayenne pepper
1 cup flour
4 eggs
5 ounces swiss cheese, shredded 1 1/4 cup can be gruyere
1 tbls dijon mustard
1/4 cup parmesan cheese, grated

Recipe Directions for Cheese Puffs

  1. In large saucepan, bring water, butter, salt and cayenne to boil, add flour all at once and stir until a smooth ball forms, remove from heat and let stand 5 minutes. Add eggs, one at a time, beating well after each addition, continue beating until smooth and shiny. Add ruyere and mustard.

  2. Drop by rounded tspful 2 inches apart onto greased cookie sheets. Bake at 425 for 15-20 minutes or until golden brown.
