One of Julianna's recipes. Please substitute red Leichester cheese for the Cheddar, if possible. Red Leichester was not in the Calorie Count database.

Recipe Ingredients for Cheese and potato twists

8 oz potatoes, peeled, diced, and boiled
2 c bread flour
1 t yeast
1 pinch salt
2/3 c water, lukewarm
1 c Cheddar cheese, finely grated
2 t olive oil

Recipe Directions for Cheese and potato twists

  1. Mash the potatoes and set aside. Sift the flour into a bowl and add the yeast and a pinch of salt. Stir in the potatoes and rub with your fingers until it resembles bread crumbs.

  2. Make a well in the center and pour in the water. Bring the mixture together with your hands.

  3. Knead for 5 minutes on a floured counter. Return to the bowl, cover with a damp cloth, and let rise in a warm place for 1 hour, until doubled in size.

  4. Turn out on to the counter and reknead the dough for a few seconds. Divide into 12 pieces and shape into balls.

  5. Scatter the cheese over a clean surface, such as a large cutting board or tray. Roll each ball of dough in the cheese.

  6. Roll each roll on a dry surface to form a long sausage shape. Fold the two ends together and twist the bread. Lay these on a baking sheet.

  7. cover with a damp cloth and let rise in a warm place for 30 minutes.

  8. Preheat the oven to 425. Bake for 10-15 minutes, until risen and golden. Carefully remove from the oven and serve.
