You can add whatever toppings you like. Just factor in the additional calories. I added capers and it was very yummy! I also used a stoneware pie pan, no preheating needed and it made a "deep dish" type pizza without all the oil.

Recipe Ingredients for Cheese Pizza

2 t olive oil
1 c pizza sauce
8 oz (2 c) part-skim mozzarella cheese or provolone, grated
2 oz Parmesan cheese, grated

Dough:
2 1/4 c unbleached flour
2 t honey
2 1/4 t active dry yeast
3/4 c water (100 - 110 degrees)
1/2 t salt

Recipe Directions for Cheese Pizza

  1. Put all pizza dough ingredients in your breadmaker and start. If too dry, add very small amounts of water until the dough is just a bit sticky. Let rise in breadmaker through first rise cycle (or just make the dough by hand). Turn out onto lightly floured surface and roll out to 12-inch circle. Place dough on a rimless baking sheet sprinkled lightly with cornmeal. Crimp edges of dough with fingers to form a rim. Lightly spray surface of dough with cooking spray, and cover with plastic wrap. Place dough in refrigerator for up to 30 minutes.

  2. For pizza: Position one oven rack in the middle level and another on lowest level of oven. Place a rimless baking sheet on the bottom rack. Preheat oven to 500 degrees.

  3. Remove plastic wrap from dough. Brush 2 t olive oil over dough. Remove preheated baking sheet and close oven door. Slide dough onto preheated baking sheet, using a spatula as a guide. Bake on lowest level at 500 degrees for 8 minutes. Remove from oven.

  4. Spread sauce in an even layer over crust, leaving a 1/4-inch border. Top with cheeses. Bake on middle rack an additional 10 minutes or until crust is golden brown and cheese melts. Cut into 12 wedges.
