Cheese Palmiers Recipe

Palmiers can be made with parmesan, as with this recipe, or with sugar for a sweet pastry. Yields about 40 palmiers when using 2 sheets of Pepperidge Farm frozen puff pastry. From: "Appetizers & Hors d'Oeuvres." p. 80. California Culinary Academy, 1985.

Recipe Ingredients for Cheese Palmiers

245 g puff pastry, 2 sheets, thawed if frozen
1 1/2 cups parmesan cheese, grated

Recipe Directions for Cheese Palmiers

  1. On a surface covered with the grated parmesan, lay out the thawed puff pastry sheet (Pepperidge Farm puff pastry sheets work well) and sprinkle with the sheet with parmesan.

  2. Fold the right side of the puff pastry in and sprinkle with cheese.

  3. Fold the left side of the puff pastry in and sprinkle with cheese.

  4. Optional: Chill for 1 hour wrapped in plastic to gain firmness

  5. Preheat oven to 350 degrees F. Cut roll into 1/4 to 1/2 - inch widths. Place on ungreased baking sheets, widely separated. Bake 10-12 minutes or until golden brown.

  6. Repeat with second puff pastry sheet.

  7. Serve warm, or cool on a rack and store in an air-tight container for up to 2 weeks.
