A nice spicy alternative to macaroni & cheese.

Recipe Ingredients for Cheese Orzo

2/3 cup orzo
1 pepper (any color)
1/2 medium onion
1 tbsp olive oil
2 eggs
2/3 cup 2% milk
1/3 cup water
1/8 tsp black pepper
3/4 cup cheddar cheese
1 tbsp Parmesan/Romano cheese

Recipe Directions for Cheese Orzo

  1. Preheat oven to 350 degrees F.

  2. Spray 2 quart shallow casserole with non-stick cooking spray; set aside.

  3. Cook pasta according to package directions, undercooking by 4 minutes; drain well. Meanwhile, in medium skillet, over medium heat, saute bell peppers and onion in oil, stirring until soft, about 5 minutes.

  4. In large bowl, combine eggs milk and black pepper.

  5. Stir in 1 cup cheese, then cooked pasta and vegetables.

  6. Pour into prepared casserole.

  7. Cover; bake 50 minutes. Uncover; sprinkle with remaining 1/4 cup cheese. Bake 10-15 minutes, uncovered, until eggs are set
