Recipe Ingredients for Cheese-less Omelet

4 tbsp Egg Whites
1 large egg Eggland's Best Egg
0.16 cup Organic Fat Free Milk
0.08 medium raw Onion Yellow
1 tbsp Peppers, Sweet, Red
0.5 oz Peppers, Sweet, Yellow
1 tbsp Peppers, Sweet, Green
0.5 oz Baby Bella
1 spray I Can't Believe It's Not Butter! Spray
0.33 second spray Olive Oil
0.031 tsp Kosher Salt

Recipe Directions for Cheese-less Omelet

  1. Cut peppers and onions into small pieces and slice mushroom. Set aside.

  2. In blender, whip 1/4 cup egg whites and one whole fresh egg in blender for one minute.

  3. Add salt and pepper and whip for a few seconds.

  4. Add milk and whip for one minute.

  5. While whipping for the last time, heat medium skillet on med for one minute.

  6. Spray bottom of skillet with Pam and spray sides of skillet with spray butter.

  7. Pour eggs in and add chopped peppers, onion and mushroom.

  8. Turn heat down to med low.

  9. Cook until egg is set, tilting skillet occasionally to distribute egg liquids under cooked egg.

  10. When egg is set, use spatula to life half of omelet over the other half.

  11. Cook another minute, then gently flip omelet and cook the other side for about a minute.

  12. When done, slide from skillet to plate so that omelet remains in one piece.

  13. Optionally serve with a TBL or two of salsa.
