Breakfast on the run - a savory muffin

Recipe Ingredients for Cheese and Ham muffins

2 cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
1/4 tsp salt
1/2 cup sharp cheddar cheese, grated
1/4 cup ham
1 egg, slightly beaten
1 cup milk or 1 can cream of chicken
1/4 cup cooking oil

Recipe Directions for Cheese and Ham muffins

  1. Measure first 6 ingredients into large bowl. Stir thoroughly. Make a well in center.

  2. In small bowl beat egg slightly. Mix in milk and cooking oil. Pour into well. Stir only to moisten. Batter will be lumpy.

  3. Fill greased muffin cups 3/4 full. Bake in 400 F (200 C) oven for 20-25 min. Let stand 5 minutes. Remove from pan. Serve warm. Makes 12.
