Light homemade pasta. Small portions, but very filling.

Recipe Ingredients for Cheese Gnocchi

1/4 c parmesean cheese
1 pound part skim ricotta cheese
1/4 c. egg beater
3/4 c. flour
1/2 tbsp. kosher salt
2 tbsp. olive oil

Recipe Directions for Cheese Gnocchi

  1. Place cheeses and egg into food processor. Mix until smooth. Add 3/4 c flour in bowl and add cheese mixture to flour. Knead together until mixed, but dont over mix. If mixture is gummy, you went to far.

  2. Dust a counter or work surface with 1/2 c. flour. Divide dough into eight even pieces. Roll each into a cylinder using hands, 1/2 in. in diameter. Cut cylinders into 1 in. pieces and place on parchment paper (on a cookie sheet) that is dusted with flour. Refrigerate for one hour.

  3. Fill bowl with ice and water. Use this as a bath for gnocchi after cooking.

  4. Bring one gallon of salted water to a boil. Add small portions of the gnocchi, cover pot, boil until they rise to top (3 minutes or so). Remove with slotted spoon and place in bath. Repeat until pasta is completely boiled and in ice bath. Remove from water and coat with 2 tbsp of olive oil. Refrigerate until ready to eat. Reheat in boiling water for one minute and serve with hot pasta sauce.
