Preparation Time: 15 min Cooking Time: 30 min Level of Difficulty: Easy Mexican cuisine, notorious for greasy, cheese-laden meals, doesn't have to be crossed off your list. We remade this classic by using reduced-fat cheeses and filling it out with vegetables.

Recipe Ingredients for Cheese Enchiladas

10 oz frozen spinach, chopped thawed and squeezed to remove excess water
15 oz part-skim ricotta cheese
1/2 cup part-skim mozzarella cheese, shredded
1 tsp dried oregano
1/2 onion, chopped
1/2 tsp table salt
1/4 tsp black pepper
248 gram whole wheat tortilla
1/2 cup salsa
1/4 cup low-fat cheddar cheese , shredded

Recipe Directions for Cheese Enchiladas

  1. Preheat oven to 400F (204C).

  2. Coat a 7 X 11-inch baking dish with cooking spray.

  3. *Cook onions in some cooking spray until soft

  4. Combine spinach, ricotta, mozzarella, oregano, onions, salt and pepper in a large bowl; mix well.

  5. Spoon 1/4 of the mixture onto the centre of each tortilla. Roll up tortillas, fold in ends and place side-by-side in prepared baking dish.

  6. Spoon salsa over tortillas and sprinkle each with 1 tablespoon of cheddar cheese.

  7. Cover with foil and bake 20 minutes.

  8. Uncover and bake until top is golden brown, about 10 minutes more.
