Corn tortilla, filled with 1 oz. colby cheese, onion, then rolled and covered in sauce.

Recipe Ingredients for Cheese Enchilada

1 Corn tortilla (tortilla,+medium+(approx+6"+dia)
1 oz. Colby cheese, shredded (28 g)
1/4 cup Old El Paso Sauce Enchilada Mild
1 tbsp chopped Onions

Recipe Directions for Cheese Enchilada

Slightly soften corn tortilla in warm pan, then fill with 1 oz. Colby cheese and 1 tbsp. chopped onion, then roll and cover with 1/4 c. enchilada sauce. (May add cheese on top of sauce, but you will have to adjust the calories to account for the additional cheese.) Bake in 350-degree oven for 10 minutes, or until cheese in center is melted.
