A traditional Mexican cheese empanada, or quesadilla.

Recipe Ingredients for Cheese Empanada

7 servings corn masa harina flour
1 cup water
2 tablespoons shortening
1/3 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
7 1/2 oz shredded jack cheese
6 tablespoons vegetable oil

Recipe Directions for Cheese Empanada

  1. Mix masa with hot water and let stand for 25 minutes.

  2. Add shortening, flour, salt, and baking powder. Divide into 12 balls and cover with plastic wrap.

  3. Flatten each ball, press cheese into center, then fold over and seal.

  4. Fry each turnover in oil.
