You can use any low-fat cheese in this recipe. Mexican blend, plain cheddar, swiss, mozzarella, whatever. You can also adjust the seasonings to suit your tastes.

Recipe Ingredients for Cheese Crisps

4 oz 2% milk cheese, grated
1/8 tsp chili powder
1/8 tsp garlic powder

Recipe Directions for Cheese Crisps

  1. Preheat oven to 350. Line a baking sheet with baking parchment.

  2. Place grated cheese in a medium bowl. Stir in the seasonings until all the cheese is coated.

  3. Drop very small spoonfuls 2" apart on the parchment. Be sure to leave the full 2" between, because these spread.

  4. Bake for about 6 minutes, until browned around the edges.

  5. Cool completely on the parchment paper. You may slide the paper off the pan onto a flat surface to hasten cooling, so they don't sit in the hot pan.

  6. This recipe will not work without the parchment paper. They will stick to foil or even if you spray the baking sheet.
