Chicken Enchiladas with red sauce and cheese.

Recipe Ingredients for Cheese and Chicken Enchiladas

1 small onion, chopped
1 1/2 c shredded cooked chicken
3/4 c shredded reduced fat cheddar
4 oz reduced fat cream cheese
8 oz enchilada sauce
16 oz salsa
8 6" flour tortillas

Recipe Directions for Cheese and Chicken Enchiladas

Preheat oven to 350. Combine salsa and enchilada sauce, set aside. Cook onion in large non-stick skillet sprayed with non-stick spray, 4-5 minutes. Add chicken, 1/2 cup cheese, 1 c salsa/enchilada sauce mixture and cream cheese. Heat and stir 2-3 minutes or until cheeses melt. Spoon about 1/3 c chicken mixture into center of each tortilla, roll up and place in 13 x 9 pan. Repeat using all tortillas. Drizzle remaining sauce over enchiladas and sprinkle with remaining shredded cheese. Cover with foil and bake 15 minutes (if cooking immediately, or 30 minutes if cooled).
