Recipe Ingredients for Cheese and Chicken Enchiladas

1 cup chopped onion
1 1/2 cups shredded chicken breast
1 cup reduced fat cheddar cheese
1 cup White Corn and Black Bean Salsa Mild
4 oz 1/3 less fat cream cheese
8 carb balance tortillas
10 oz Mild Enchilada Sauce

Recipe Directions for Cheese and Chicken Enchiladas

  1. Preheat oven

  2. Saute onion in non fat cooking spray. Add chicken, 1/2 cup of cheese, salsa, and cream cheese.

  3. Cook until cheese melts

  4. Spoon about 1/3 cup of mixture in tortilla and roll up. Place in 13x9 baking dish.

  5. Pour enchilada sauce over the top and remaining cheese.

  6. Cover and bake for 15 minutes.
