Elbow macaroni smothered in homemade cheese sauce and ground beef is a great twist on the traditional mac and cheese recipe. This original recipe calls for full-fat ingredients but can be reduced in fat content by using extra lean ground beef, low or no fat cheese (I use regular cheese) and skim milk. This is a good recipe for those with high energy levels as it is packed with protein (25 grams per serving!). My kids love it!

Recipe Ingredients for Cheese Burger Macaroni

2 cups elbow macaroni
2 tbsp margarine
2 tbsp flour
1/4 tsp dry mustard
1 cup skim milk
1 cup low fat cheddar cheese
1 tsp salt
1 tsp pepper
12 oz extra lean ground beef
1/2 cup green pepper

Recipe Directions for Cheese Burger Macaroni

  1. Boil macaroni, drain and set aside.

  2. Brown beef.

  3. After five minutes add green pepper.

  4. Add salt and pepper and set aside.

  5. In a large saucepan, melt margarine.

  6. Add flour and dry mustard and mix well.

  7. Add milk slowly stirring all the time until thickened.

  8. Remove mixture from heat.

  9. Add cheese and stir until smooth.

  10. Add drained macaroni and beef mix well and serve.
