Recipe Ingredients for cheese bourekas

2 tbsp dry active yeast
2 cups water
1 pinch of sugar
1 tsp salt
1/2 pound margarine
4 cups flour
1 tbsp anise
2 eggs
1 1/2 cups cottage cheese
1/2 c sour cream
1 teaspoon dried parsley
1/4 tsp garlic powder
1/8 tsp salt
1/8 tsp pepper

Recipe Directions for cheese bourekas

  1. Dough

  2. Proof the yeast in about cup warm water. Add a pinch of sugar

  3. Add the salt, remaining water, margarine, and some of the flour. Gradually add the remaining flour and the anise. Blend with your hands and knead well. If the dough is too soft or sticky, add more flour.

  4. Place in a greased bowl and let rise, covered, until doubled in bulk (about 1 hour or more).

  5. Punch down, knead again, and let rise again until doubled.

  6. Filling

  7. Beat 1 egg in a medium bowl, and mix in the cheese. Season with parsley, garlic powder, onion powder, salt, and pepper.

  8. Putting it together

  9. Take a piece of dough the size of a plum and roll it into a ball.

  10. Press it down on a floured board until it flattens into a circle. Place 1 tbsp of filling in the center. Fold over and pinch down into a half-moon shape.

  11. For cheese sambusak, preheat oven to 400 degrees F. Place on a greased cookie sheet and bake about 15 minutes, or until golden.
