Vegan cheese and black bean enchiladas

Recipe Ingredients for Cheese and black bean enchiladas (Vegan)

18 corn tortillas
1/4 cup raw cashews
1 1/2 cups cold water
2 tablespoons cornstarch
2 tablespoons nutritional yeast flakes
1 tablespoon lemon juice
1 teaspoon salt
1 1/2 teaspoon chili powder
1/4 teaspoon cayenne
15 oz black beans
1 large onion
15 oz corn
2 1/2 cups enchilada sauce

Recipe Directions for Cheese and black bean enchiladas (Vegan)

  1. Prepare cheese sauce separately (instructions in my cheese sauce recipe), then combine black beans (drained), onions and corn (drained or frozen).

  2. Chill for a little while to thicken.

  3. Roll into corn tortillas - dipping them in enchilda sauce first - and pour the remaining sauce on top.

  4. Prheat oven to 375 degrees and cook for approximately 25 minutes.
