Cheese and Bean Quesadillas Recipe

I miss quesadillas! Use high fiber (low carb) whole grain tortillas.

Recipe Ingredients for cheese and bean quesadillas

15 oz eden black beans
1/2 cup diced red onion
6 oz diced chicken (cooked, optional)
1 cup diced tomatoes no salt added
1/2 tsp cumin
1/4 tsp cayenne pepper
6 oz fat free cheddar cheese
6 tortillas, 8 inch

Recipe Directions for cheese and bean quesadillas

  1. Heat oven to 400 F.

  2. Rinse beans and mix with onion, tomatoes and cumin.

  3. Put one tortilla on cookie sheet. Spirinkle half of tortilla with 2 tbp cheese, then add 3 tablespoons of bean mixture and spread around half of tortilla, then 2 tbsp cheese. Fold tortilla in half.

  4. Repeat for each tortilla.

  5. Bake 5 min, then turn and bake 5 more minutes.
