Recipe Ingredients for Cheese and Basil Polenta

1 1/2 cups of shredded mozzarella
1/3 cup of grated parmesan
2 tbsp of fresh basil
1 cup of yellow corn meal
3/4 cup of chopped onion
2 cloves of garlic minced
1 tbsp of butter
1 tbsp of olive oil
28 oz of diced tomatos
3 oz of tomato paste
1/2 tsp of sugar
1/4 tsp of salt
1/8 tsp of pepper
1/4 cup of fresh basil

Recipe Directions for Cheese and Basil Polenta

  1. In medium bowl stir together cheeses, and basil, set aside.

  2. For poleta in a medium saucepan, bring 2 3/4 cup of water to boiling. Meanwhile in a bowl combine cornmeal , 1 cup of water and 1/2 tsp of salt. Slowly add cornmeal to boiling water, stirring constantly Cook and stir until mixture comes to a rolling boil. Reduce heat to very low for 10 to 15 minutes until very thick, stirring. Immediately transferr to a square, greased pan. Pour in 1/3 of polenta, top with half the cheese mixture, add another 1/3 and another layer of cheese mixture. Top with remaining polenta let cool one hour, then refrigerate for one hour or overnight. Bake in a preheated oven at 350 degrees for 40 minutes. Remove from oven and let cool for ten minutes befoe serving.

  3. Tomato basil sauce, saute the onion and garlic in pan that has been heating and melting the butter and oil. Saute until tender, add the diced tomatoes and tomato paste and spices. Bring to a boil then reduce heat and let simmer for 20 minutes and the 1/4 of fresh basil let cook 5 minutes.
