Recipe Ingredients for cheddar stuffed poblano chiles

3/4 lb. green peppers (poblanos)
1 cup frozen corn
1 large tomato
1 T cilantro
1 T olive oil
1/2 T lime juice
3 oz. cheddar cheese, cut into 4 slices

Recipe Directions for cheddar stuffed poblano chiles

  1. Broil peppers for 8-10 minutes (turn occassionally) - until blistery and charred. Transfer to a bowl and cover with plastic wrap for 10 minutes to steam and cool.

  2. Mix thawed corn, diced tomatoes, cilantro, 1 t. oil, lime juice, and salt to taste. Set aside.

  3. With your fingers, peel and discard skin from the chiles. With a knife, cut around the stem and remove/discard the stem and seeds. Try to let the chile stay intact. Place one slice of cheese in each chile, breaking the slice as necessary to make it fit. Brush the remaining 2 t. olive oil on the outsides of the chiles and sprinkle with salt to taste.

  4. Return chiles to the broiler and cook, turning once, until lightly burnt and the cheese has melted - about 2 minutes.

  5. Divide the corn salad onto the plates and place 2 chiles on top.
