Cheddar and Potato Ale Soup Recipe

Partially lifted this from another site and made some modifications. Can be made with 3 cups cheddar, but I had a cup of mozz around and it was fine! Also, the original recipe calls for chicken broth, I use a "chicken-less" chicken broth that I can't find on this site, so use either of those in place of ceggie broth if you wish! I used Long Trail, in the tradition of my dearly departed soup stand on Church St, but any beer should work.

Recipe Ingredients for Cheddar and potato ale soup

4 cups diced potatoes
1 cup diced carrot
1 cup diced celery
32 oz vegetable broth
1 Salt and pepper to taste
1 Garlic salt to taste
1 Seasoned salt to taste
2 cups nonfat milk
3 cups shredded Cheddar cheese
16 oz beer

Recipe Directions for Cheddar and potato ale soup

  1. Combine the potatoes, celery, carrots, enough broth to cover the potatoes, bottle of your choice of beer and seasonings in a large kettle over medium heat.

  2. Bring to a boil.

  3. Reduce heat and simmer, covered, for 20 minute or until potatoes are tender.

  4. Puree in a blender in batches.

  5. Return each batch to the kettle.

  6. Stir in the milk and heat through.

  7. Stir in the cheese and heat until melted, stirring frequently. BEST RESULTS IF DONE CONTINUOUSLY WITH A WHISK!!
