This hearty, golden muffin is a great addition to a soup or salad meal. An extra-sharp cheddar lends flavor, and a mixture of fresh herbs delivers fragrance to each bite. To put a different spin on these savory muffins, replace the rosemary with chopped fresh dill.

Recipe Ingredients for Cheddar-Herb Muffins

1 1/4 cups all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons chopped fresh chives
1 tablespoon chopped fresh rosemary
1 1/2 cups finely shredded extra-sharp cheddar cheese
2 large eggs
1 cup buttermilk
2 tablespoons honey
1/3 cup olive oil

Recipe Directions for Cheddar-Herb Muffins

  1. Position a rack in the middle of the oven, and preheat to 400F.

  2. Butter 12 standard muffin-pan cups or line them with paper liners.

  3. In a bowl, stir together the all-purpose and whole-wheat flours, baking powder, baking soda, salt, chives, rosemary, and 1 1/4 cups of the cheese.

  4. By hand: In a bowl, whish the eggs until blended, then stir in the buttermilk, honey, and oil. Pour over the dry ingredients and stir with a rubber spatula just until moisten.

  5. By mixer: In a large bowl, beat the eggs on low speed until blended. Add the buttermilk, honey, and oil and beat until blended. Add the dry ingredients and mix just until moistened.

  6. Spoon the batter into the prepared muffin cups, filling each up about 3/4 full.

  7. Sprinkle the remaining 1/4 cup cheese evenly over the tops.

  8. Bake until a toothpick inserted in the center of a muffin comes out clean, 15-18 minutes.

  9. Let cool in the pan on a wire rack for 2 minutes, then turn out onto the rack.

  10. Serve warm.

  11. Store in airtight container at room temperature for up to 2 days.
