Recipe Ingredients for Cheddar Ham Chowder

2 cups water
2 cups potatoes, peeled and cubed
1/2 cup carrots, sliced
1/2 cup celery, sliced
1/4 cup onions, chopped
1 tsp salt
1/4 tsp pepper
1/4 cup butter
1/4 cup flour
2 cups milk
2 cups sharp cheddar cheese, shredded
1 cup corn, frozen
1 1/2 cups ham, full-cooked, diced

Recipe Directions for Cheddar Ham Chowder

In large saucepan bring water, potatoes, carrots, celery, onions, salt and pepper to boil. Reduce heat; cover and simmer for 8-10 minutes until vegetables are just tender. Remove from heat. (For thicker soup, drain 1/2-1 cup of liquid). Microwave milk in large Pyrex cup for about 3 minutes. Meanwhile, in medium saucepan on low heat, melt butter. Blend in flour. Add hot milk and stir constantly until thickened and bubbly. Turn off heat. Add cheese and stir until melted. Stir into vegetables; add corn and ham. Heat through and serve.
