Recipe Ingredients for Cheddar and grilled sweet onion quesadillas

1 gram Olive Oil cooking spray
1 large vidalia onion
1 dash of salt
1 dash of pepper
1 ripe medium tomato
112 grams (1 cup) shredded reduced-fat Cheddar cheese
3/4 teaspoon cumin
204 grams (4) flour tortillas, 8-inch diameter
60 grams (1/4 cup) of fat-free sour cream
1/2 ounce of lime juice (2 Tablespoons)

Recipe Directions for Cheddar and grilled sweet onion quesadillas

  1. Spray a grill-pan or skillet with olive oil cooking spray and heat over medium heat. Halve and slice the onion.

  2. Place the onion slices in the grill-pan and season with salt and pepper. Grill, turning occasionally, for 8 minutes or until lightly grilled and tender.

  3. Meanwhile, chop the tomato. Combine the tomato, Cheddar cheese and cumin in a small bowl.

  4. Place the tortillas on a work surface. Place half the ionions on 1 half of 1 side of each tortilla. Sprinkle the cheese mixture on top of the onions, and fold the tortillas in half, pressing firmly.

  5. Spray a nonstick skillet with olive oil coooking spray and heat over medium heat. Place 2 of the filled tortiallas in the skillet and cook 2 minutes per side, until lightly browned and the cheese has melted. Transfer to a plate and repeat with the remaining tortiallas. Whiele the quesadillas cook, squeeze 1 Tablespoon of lime juice. Combine the lime juice and sour cream in a small bowl. Stir until blended.

  6. Cut quesadillas into 3 or 4 wedges and serve with sour cream.
