This is a taste bud tingling, filling and nutritious baked dish. Scramble subscriber Ellen Wixted says that this recipe "has become one of my family standards. I've adapted it every which way depending on what's in my fridge, and it always ends up tasting great." Serve it with sliced avocados with lime.

Recipe Ingredients for Cheddar Cornbread Casserole

1 tbsp. butter, melted
1 eggs, beaten
1 cup yellow cornmeal
1 cups shredded Cheddar cheese
1 oz. corn
1 cup water
1 oz. canned cannellini or pinto beans,
1 oz. low fat sour cream
1 tbsp. sugar (optional)
1 tsp. salt
1 cup salsa
1 cup smoked ham or sausage, diced

Recipe Directions for Cheddar Cornbread Casserole

  1. Preheat the oven to 350 degrees. Spray a 9 x 13-inch baking dish with nonstick cooking spray.

  2. In a large bowl, mix together all the ingredients until just combined, but don't over mix it. Put the mixture in the baking

  3. dish.

  4. Bake it, uncovered, until it is lightly browned and cooked through, 45 - 55 minutes. (Meanwhile, prepare the avocados,

  5. if you are serving them.) Cut the casserole into squares to serve it.
