Nice addition to vegetarian chili.

Recipe Ingredients for Cheddar corn muffins

1 1/4 cup cornmeal
3/4 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 ounces cheddar cheese
4 ounces green chiles
1.33 cup buttermilk
2 eggs
3 tablespoons olive oil

Recipe Directions for Cheddar corn muffins

  1. Combine dry ingredients thoroughly

  2. Combine wet ingredients thoroughly

  3. Combine wet into dry very gently

  4. Scoop into prepared muffin tin

  5. Bake at 375 for 20-25ish minutes

  6. Cool at least ten minutes before removing.

  7. Serve beside something very low fat!
