Combination of two all time classics, chicken soup and corn chowder

Recipe Ingredients for Cheddar Chicken Chowder

4 slices turkey bacon
2 pounds boneless skinless chicken breasts
1 cup chopped onion
1 cup diced red bell pepper
4 garlic cloves, minced
9 cups fat free chicken broth
2 1/2 cups red potato, chopped
4 1/2 cups frozen whole kernel corn
1 cup all purpose flour
4 cups non fat milk
1 1/2 cups shredded cheddar cheese
1 tsp. salt
1/2 tsp. black pepper

Recipe Directions for Cheddar Chicken Chowder

Cook bacon over med. high heat until crisp. Remove bacon, add chicken, onion, bell pepper, and garlic to drippings, saute 5 minutes. Add broth, potato and bring to boil. Cover, reduce heat and simmer for 20 minutes or until potato is tender; spoon flour into dry meauring cup, level with knife. Place flour in a bowl and gradually add milk, stirring with a whisk until blended, add to soup. Bring to a boil over med. high heat. Reduce heat and simmer 15 minutes or until thick, stir frequently. Stir in cheese, salt and pepper. Sppon into bowls and top with crumbled bacon.
