Recipe Ingredients for Cheddar Cheese Souffle

4 eggs, separated
2 tbsp butter
3 tbsp flour
1/8 tsp cayenne
1/8 tsp paprika
3/4 cup milk
2 cup cheese, grated cheddar
1/4 tsp cream of tartar

Recipe Directions for Cheddar Cheese Souffle

  1. Let egg whites warm to room temperature in the bowl of a large mixer

  2. Melt butter in med. saucepan; remove from heat. Stir in flour, salt, cayenne and paprika until smooth. Stir in Milk

  3. Over med. heat, bring to boiling point, stirring. Add cheese; stir until it melts. Remove from heat

  4. Let cool, stir in slightly beaten egg yolks.

  5. With mixer at high speed, beat egg whites with cream of tartar just until stiff peaks form when beater is slightly raised.

  6. With wire whisk or rubber scraper, using and under-and-over motion, gently fold cheese mixture into egg whites.

  7. Turn into ungreased, 1.5 quart straight side souffle dish.

  8. Make top hat: With back of a large spoon, make a deep path around souffle top, about one inch from edge.

  9. Set dish in a pan containing about one inch of hot water

  10. Bake at 350F 50-55 minutes

  11. Serve at once
