Recipe Ingredients for Cheddar Cheese Crackers

1/2 cup butter
1/2 teaspoon salt
2 cup cheddar, extra sharp
3/4 cup unbleached flour
3/4 cup whole wheat flour
1 teaspoon baking powder
1/8 teaspoon cayenne pepper

Recipe Directions for Cheddar Cheese Crackers

  1. You can alter the spices in these crackers. I've tried adding seasoning salt instead of the salt, and have added fine rosemary and garlic blend too.

  2. Using a food processor, grate the cheese, finely and then grate the cold butter.

  3. Add the dry ingredients and pulse until it looks like course meal .. . pulse again and again until it starts to form a ball. Remove from food processor and for a ball. Make two equal tubes of dough about 1 inch in diameter. Wrap in waxed paper.

  4. Chill for 30 to 40 minutes in the refrigerator and then slice each roll into slices about 1/8-inch thick.

  5. Bake on an ungreased cookie sheet at 400 degrees F for about 10 minutes.

  6. I got about 100 small crackers - so 10 per serving. Count your crackers and divide by 10 to get the correct calorie count. Enjoy
