Recipe Ingredients for Cheddar cheese & broccoli soup

150 g butter, melted
150 g flour
1/2 large onion, finely diced
500 g broccoli, blanched
1 broccoli stalks, peeled and cooked
5 cups cold water
55 g chicken bouillon
5 cups 2% milk
227 g cheddar cheese, shredded

Recipe Directions for Cheddar cheese & broccoli soup

  1. Prepare the chicken stock and keep hot. Prepare the onions and set it aside.

  2. Sweat onions in the butter inside a large stock pot.

  3. Turn off heat and add flour all at once. Mix with a wooden spoon until smooth.

  4. Add chicken stock two ladles at a time stirring well after each addition. Keep adding the chicken stock untill all of it is gone.

  5. Warm the milk. Add it all at once to the stock and stir well. Turn on the heat to medium-high, and using a metal whisk, keep stirring until very thick.

  6. Prepare the broccoli to florets and stalks. Steam the florets for 1 minute and refresh in ice water.

  7. Cut up the stalks to 1/2inch widths and steam for 8 minutes. Puree the stalks until smooth. Add to the soup.

  8. When soup has thickend, and reached a temperature of 185-190 degrees F and no hotter, check the soup.

  9. Slowly add the cheese, melting it between additions

  10. Cook until cheese is melted and tastes good.

  11. Season if necessary with tabasco sauce.

  12. Re-heat the broccoli florets in teh steamer for about 30 seconds and add them to the hot soup.
