Lots of cheese and bacon will have the kids eating their veggies in this terrific casserole.

Recipe Ingredients for Cheddar Cauliflower Casserole

1 head cauliflower, cooked and mashed
1 1/2 c. Shredded Natural Mild Cheddar Cheese
1/4 lb. bacon, crisply cooked and crumbled, divided
1/4 c. chives, chopped
1/2 c. cream cheese, softened
2 T. sour cream
1 salt and pepper to taste

Recipe Directions for Cheddar Cauliflower Casserole

  1. Combine cauliflower, half the cheddar cheese, and three quarters of the bacon in a medium bowl.

  2. Add cream cheese and sour cream; mix well.

  3. Spread the mixture in a greased 8"x8" baking pan; top with remaining cheese and bacon. Sprinkle with chives, salt, and pepper.

  4. Bake, uncovered at 350 degrees for 20 to 25 minutes, until golden around edges.
