1 cup of onion, chopped
1 head of cauliflower, chopped
4 cups of low-sodium vegetable broth
1 tsp. dry mustard
1 tsp. sea salt
1 tsp. black pepper
1/2 tsp. nutmeg
1 cup of low-fat cheddar cheese, shredded
