Recipe Ingredients for Cheddar and Broccoli Strata

1 tbsp butter
4 tbsp shallots, finely chopped
1/2 lb broccoli
6 oz green beans, halved
2 cups frozen corn
9 slices bread, halved crusts removed
4 eggs
2 1/3 cups 2% milk
2 tbsp chives, snipped
2 tbsp parsley, chopped
3/4 cup light cheddar cheese, grated
1/4 tsp pepper
1/2 tsp salt

Recipe Directions for Cheddar and Broccoli Strata

  1. Melt butter in frying pan. Add shallots and cook until softened. Cook brocoli and green beans in boiling water until tender. Drain, then stir with shallots and corn in a bowl, season to taste.

  2. Arrange six halved bread slices side by side in lightly greased ovenproof dish. Top with half the broccoli mixture, add another layer of bread then broccoli, then top with final layer of bread.

  3. Wisk eggs, milk, chives and parsley, then season. Pour mixture over layered bread and vegetables, then sprinkle cheese on top. Set aside 30 minutes. Prehead oven to 350 degrees.

  4. Bake casserole 1 hour or until set, puffy and golden brown. Spoon strata onto serving plates.
