Cheesy, broccoli and assorted veggi soup

Recipe Ingredients for Cheddar Broccoli Medely

1 1/2 cup broccoli
1 1/2 cup carrots
1 1/2 cup potatoes
1/2 onion
3 cloves garlic
1/2 cup celery
6 mushrooms, sliced
1 1/2 cup soy milk
1/2 cup flour
6 oz cheddar cheese
16 oz vegetable broth
3 tbsp oregano
2 tbsp salt
2 tbsp pepper

Recipe Directions for Cheddar Broccoli Medely

  1. Sautee onion, garlic and mushrooms. Add all veggies and broth and let simmer until everything is soft.

  2. mix milk and flour together in a separate bowl until well blended and then slowly add to broth mix for thickening.

  3. Add cheese last - do not let boil.

  4. Spice to taste.
