Cheddar apple muffins (modified from BH&G recipe). Makes 24 mini-muffins.

Recipe Ingredients for Cheddar apple muffins

1 1/2 cups flour
3/4 cup cheddar cheese, sharp white shredded
1/3 cup quaker oats
2 tbsp sugar
2 1/2 tbsp baking powder
1/4 tsp salt
1 egg
3/4 cup milk
1/3 cup canola oil
1 cup apple, chopped

Recipe Directions for Cheddar apple muffins

  1. Preheat oven to 400 degrees Fahrenheit

  2. Coat 2 mini-muffin pans with no-stick spray

  3. Blend dry ingredients and cheese in medium mixing bowl

  4. blend egg, milk and oil in a separate mixing bowl

  5. blend wet ingredients into dry

  6. Fold in apples

  7. Carefully spoon mix into muffin pans until each cup is full

  8. Bake for 15 minutes, or until top is golden and toothpick stuck into center comes out clean
