Quick way to use up leftover chicken

Recipe Ingredients for Cheats Chicken fried rice

140 grams Sweetcorn
80 grams Tomatoes
200 grams Chicken, Roasting, Meat Only
1 medium (2-1/2" dia)(110 g) Onions
120 grams Mushrooms
90 grams Rice
250 grams Uncle Ben's Wholegrain Rice with Mediterranean Vegetables

Recipe Directions for Cheats Chicken fried rice

  1. Soften the onion and mushrooms in a little butter or oil.

  2. Chop the chicken pieces up and add to the frying pan.

  3. Cook rice in the microwave. (I usually use one pack of mediterranean vegetable rice and cook separately 90g (dry weight) basmati rice).

  4. Add rice to the pan, along with the tomatoes and sweetcorn and cook for 5 minutes.

  5. Serve up and enjoy!
