Ratatouille for cheaters! Quick and easy, but always delicious.

Recipe Ingredients for Cheater's Ratatouille

16 oz Ready-Cut - Diced Tomatoes
2 small Squash, Summer, Zucchini, Includes Skin
3 cup slices Squash, Summer, Crookneck And Straightneck
1 cup chopped raw Vidalia Onion
6 cloves Garlic
1/4 cup leaves, whole Basil, Fresh
1 cup (1" cubes) Eggplant
1 tbsp Olive Oil

Recipe Directions for Cheater's Ratatouille

  1. Saute chopped onion and garlic in olive oil.

  2. Add chopped zucchini and summer squash, saute until mostly cooked and slightly browned. Add eggplant and saute until a little squishy.

  3. Add the entire can of diced tomatoes with juice, as well as the chopped fresh basil. Stir everything together and let simmer.

  4. Spice with thyme, cilantro, and oregano to taste, salt and pepper as desired.
