Chayote is known as chow-chow or bangaluru katthirikai in chennai and makes a toothsome side dish for rice.

Recipe Ingredients for Chayote squash (chow-chow) kootu.

1 cup chayote
1 oz mung bean
1/4 tsp oil
1/4 tsp mustard
1/8 tsp black bean, dehusked
1 salt to taste
1/4 cup peas, shelled
1/4 cup carrots

Recipe Directions for Chayote squash (chow-chow) kootu.

  1. peel, chop chayote and carrots.

  2. cook the vegetables and the peas with the mung bean.

  3. when almost cooked, add salt and cook till done.

  4. heat oil, splutter mustard seeds, add black bean, saute till it turns golden brown add to the vegetable-mung dish.
