Chayote squash takes longer to cook than any other, so be patient! The dish is easy to make and delicious. Serve with a dollop of Greek yogurt, if you like.

Recipe Ingredients for Chayote Squash & Beef Goulash

2 cup pieces Chayote Squash
1 serving ( 3 oz ) Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
1 1/2 cup Diced Tomatoes, No Salt Added
1/2 cup, chopped Onions
1/4 cup Nuts Pine
1 tsp garlic, minced
1 tsp cumin
1/2 tsp oregano

Recipe Directions for Chayote Squash & Beef Goulash

Saute onions in PAM-sprayed skillet until translucent. Add meat and cook until browned. There should be very little fat in the pan, so no need to drain. Add canned tomatoes, minced garlic and spices. Cover and simmer for 45 minutes, or until squash is fork tender. Add pine nuts.
